Abstract

The objective of the research was to develop strategies to promote Ecuadorian endemic products from the Tungurahua Province of Ecuador. The research was descriptive, the technique was the survey and the instrument was the questionnaire; population, the study was focused on Bolivariana Avenue, which has twenty-five (25) restaurants. The results reflected that the use of cutting-edge techniques provides a special experience for the diner, where the addition of times such as cocktails and pastries allow great innovation and fusion around a preparation with a greater number of textures, colors and unmatched temperatures. In conclusion, there are studies based on our gastronomy and there is a lack of avant-garde cuisine. It should also be noted that in Ecuador there is no support from national or international entities for research into native products.
